Brown rice oriental

Ingredients:


  • brown rice
  • 1/4 green pepper
  • 1/2 red pepper
  • 1/8 red onion
  • 12 snow peas
  • 1/2 zucchini
  • bean sprouts

Method:

Cook the brown rice: rinse 1 cup rice and add 2 and 1/4 cups water; bring to a broil and let it simmer for 45 minutes, covered.

Saute in a pan all the veggies, add soy sauce and eventually mix in the rice.

The Master list

Lunch ideas:


1) Avocado toast with tomatoes *
2) Tabbouleh salad *
3) Roasted small potatoes (with red onions and red peppers) , green beans and "chicken"
4) Brown rice with general Tau *
5) Ghiveci de legume
6) Greek salad *
7) Stir fry with brown rice
8) Healthy pasta with fried mushrooms and zuchinni
9) Panini boconcini
10) Healthy spaghetti, with garlic, baby spinach and baby tomatoes *
11) Pearl couscous with grilled squash.

Tabbouleh Salad


 Ingredients for 2 servings:


  • 1/2 cup quinoa
  • 1/2 cup water
  • 1/2 cup finely chopped fresh parsley
  • 1 tbsp finely chopped fresh mint leaves
  • 1 tbsp finely chopped tomato
  • 1 tbsp finely chopped cucubmer
  • juice of 1 lemon
  • 1 radish, sliced thin
  • 1 tsp salt
  • 1 tsp granulated garlic
  • 1 tsp pepper
Instructions:

Cook the quinoa according to the instructions on the package.
Equal parts quinoa and water, on low heat, covered, until water is all gone. 
Spread it out on a backing sheet to cool.

Combine the parsley and mint in a medium size bowl. Mix them thoroughly by hand.
Add the tomatoes, cucumber and radish and mix.
Add the lemon juice, spices and mix again.
Add the quinoa and mix one last time.

Brown rice with General Tau

 Use the below ratio:

  • 1 cup of brown rice
  •  2 1/2 cups water
Bring rice and water to a boil.
Reduce heat to low and simmer, covered, until the rice is tender and most of the water is absorbed, 40 to 50 minutes.
Let stand 5 minutes and fluff with a fork.
Makes 3 cups of rice.
Add General Tau chicken.

Avocado toast with tomatoes

Ingredients

  • 1 avocado ripe
  • 2 slices bread of choice sourdough is my favorite
  • 1 garlic clove cut in half (skin on)
  • Extra virgin olive oil good quality
  • Salt and pepper
  • lemon juice optional, from a fresh lemon is best
  • Finely chopped cilantro or parsley

Instructions

  1. Cut avocado in half and remove seed.
  2. Toast bread to your taste, using your method of choice.
  3. While toast is still hot, lightly rub the surface with the cut side of the garlic clove.
  4. Use a spoon to scoop avocado flesh out, then a fork to mush it onto the toast.
  5. Sprinkle with salt and pepper.
  6. Squeeze over a bit of lemon juice, drizzle with olive oil, sprinkle with cilantro or parsley.  Add baby tomatoes also.
  7. Serve immediately!

Ginger Apple cookies for Dogs

INGREDIENTS
1 c brown rice or wheat flour, your preference
1/2 c diced apple
2/3 c plain Greek yogurt
1/2 t fresh minced ginger OR 1 t ground ginger
1 T coconut oil
DIRECTIONS
1) Preheat oven to 350 degrees.
2) Mix all ingredients together in a large bowl until thoroughly combined.
3) Turn mixture out on a floured flat surface and roll out to approximately 1/4 inch thick.
4) Cut into shape using cookie cutters and place on a baking sheet covered with parchment paper. If you don't want to use cookie cutters, simply make small dough balls.
5) Bake for 20-25 minutes or until golden brown.
6) Store uneaten cookies in a cute treat jar for up to one week.
